I love making sweets that can be made on a whim because they only require a few minutes and staple ingredients. I learned this toffee recipe in an elementary school cooking class and have been making it from memory ever since. It doesn't get any easier!
Preheat oven to 350 degrees. Grease a cookie sheet and line with a sleeve of saltine crackers. In a saucepan on medium, combine 1 stick of butter and 1 cup brown sugar. Stir continuously. When it comes to a boil, slowly pour mixture over crackers and spread with a spatula. It doesn't have to be perfect. That's why I love this recipe! Bake 5 minutes. Remove from oven and sprinkle with 1 bag milk chocolate chips and if you wish, a half cup of chopped nuts. Allow to melt, smoothing the chocolate with a spatula. Once it has completely set {you can refrigerate to speed the process}, break into pieces.
Love s'mores? Substitue saltines for graham crackers and top with marshmallows.

I love these! I have never thought to use graham crackers and marshmallows for a s'mores version. Very cool! Thanks for sharing!
