"Healthy" Peanut Butter Cookies

This recipe was adapted from one I discovered on Pinterest, however, in the picture, the cookies looked a little flat.  Also, it claimed that the cookies were just 36 calories each.  I did the math and found that they were truly 80 calories, still less than the traditional peanut butter cookie.



The simplest cookies!

Preheat oven to 350 degrees


Mix 1 cup of peanut butter and 1 cup of sugar.  Add 1 egg, 1/4 tsp salt, 1 tsp vanilla, 1 tsp baking soda.


Roll into balls and place on cookie sheet. Bake 11 minutes.  
Hands on time: 5 minutes
Yields: 2 dozen


Enjoy without guilt!

Day 1, chewy w/ a hint of crisp. Our whole family couldn't get enough of them!
